amaze balls – healthy snack recipe


To avoid a week of terrible snack choices and late night sweet cravings, I have made a batch of AMAZE – BALLS! They are filled with only goodness and so easy to prepare. Your 3PM snack, dessert or just a little treat, these balls are packed with protein and good fats.

INGREDIENTS

1 cup of medjool dates – these are available at Coles or Woolies in the fruit and veggie section. They are a much healthier option than the pitted dates from the pantry.

1 cup of cashews – this week I didn’t have any cashews so I used pistachios and macadamias and they were just as delicious.

1/2 cup of almonds

1/2 cup of oats

1/2 cup of desiccated coconut

1/2 cup of cacao powder – available at the health food shop.

1 tbsp coconut oil – no need to melt just scoop it in.

RECIPE

Remove the seeds from the dates and soak in a bowl of cold water for 15 to 20 minutes.

Grab your food processor and mix together your nuts and oats until a rough crumb.

Add your soaked dates, coconut, coconut oil and cacao powder until combined.

Use a tablespoon to scoop out your mixture and squeeze it into your hand to create a ball shape.

Roll in chia seeds or coconut or just have them as they are.

Store in airtight container in the fridge or freezer.
