I have been in a breakfast rut for a while now and decided this weekend I needed to get back into planning healthy meals for the week. So far so good! This Chia pudding with fruit is the perfect breakfast for anyone needing a quick and easy option and you can prepare it the night before.
1 cup of almond milk
1 cup of natural greek yogurt
1/4 cup chia seeds
2 teaspoons honey
1/2 teaspoon of vanilla essence
Combine all ingredients together in a bowl, cover with cling wrap and put in the fridge overnight.
Some of my favourite toppings are strawberries, bananas, kiwifruit and coconut shavings.
Makes 3-4 serves.
